You’ve been to restaurants where you can order a “loaded” baked potato, or a baked potato “with all the fixin’s.” They probably look something like this:
Sure, that looks yummy, if you’re into eating animal products, which I’m not. That is how we used to eat our loaded baked potatoes. Since switching to a vegan diet, this is what “loaded” looks like for us:
“Po-Tacos” (named by my kids)
- Baked potato (I used Russet potatoes) – preheat to 450 & bake for 1 hour right on the rack
- Romain Lettuce
- Heirloom tomatoes
- Corn
- Black beans*
- Red Beans*
- 505 Southwestern Salsa
- Guacamole
Basically, you bake your potato, break it open, top it, and eat it 🙂 My kids make a version of this frequently. Aren’t those some beautiful colors? I love meals with lots of color. Plus, this potato has far less fat than the traditional baked potato and is quite filling.
If you need something a little quicker than this, you can heat your potatoes in the microwave and top them with Amy’s canned chili. They have several varieties of chili. They are delicious. Add a side salad and enjoy.
*I soak and cook large batches of organic beans in my slow cooker. Then I bag them into can sized increments and freeze. I pull out when I need and re-heat.
