365 Raw: Day 31 with “Burritos”

I woke up at 3:35 on Day 31 – Whoa! I made it past thirty days! Sweet Action! I’m really not sure why but I was wide awake at 3:35. I was cautiously optimistic, but I felt good most of the day. I’m going by my stomach, only eating when I’m hungry, and only what I want.

While I was in bed for 72 hours, I received notification that one of the YouTube channels I follow posted a new video called “The FullyRaw Burrito!”… say what? So, I watched Kristina’s Raw Burrito video, and I’ve been thinking about that burrito ever since. I showed the video to the Husband and today, while he was out, he picked up the ingredients so I could have that for our “at home date night”… Ooo la la!

So, how did it turn out? It was pretty darn good, and helped me be totally fine with the Husband sitting next to me noshing on a Qdoba veg burrito. There are a couple of things I might change next time though. 1) Less lemon juice (see how runny my sauce was), 2) I would toss all my veggies and sauce together in a bowl, then add it to the collard green leaf, 3) I would probably add in some mango for a touch of sweet… cause I like sweet ‘n’ spicy. 4) I might spread the avocado on the leaf so that I get a bit of that taste in every bite. 5) Might try lime instead of lemon next time… or lemon/lime. Still, the taste was actually really good. I can’t believe I willingly put cucumbers on it, but I did, and I liked them.

Between the avocado and the nuts I had today, my fat intake was a bit higher than usual, but my average is still well below 10%.

What I ate:

  • Breakfast – 5 oranges
  • AM Snack – 2 bananas, 1 oz raw cashews
  • Lunch – 4 oranges juiced
  • Afternoon Snack – 1 banana
  • Dinner – “The FullyRaw Burrito!”
  • PM Snack – raw Blueberries & Mixed Dried Fruit (not sure how much I’ll have of these, the night’s still young)

What I did: 20 minute walk

Here are the notes I made regarding my symptoms throughout Day 31:

  • slowed digestion (gas, abdominal pain, bloating)
  • headaches
  • puffy hands, feet, and face
  • sinus congestion
  • dry/itchy eyes, skin, and scalp
  • acne
  • aching muscles and muscle spasms
  • foggy brain
  • irritability
  • mood swings
  • blood sugar fluctuations
  • fatigue
  • unable to sleep well
  • unquenchable thirst
  • cravings
  • chest pain
  • cold soreslast one 1/13/2013
  • kidney stones – eliminated when we went vegan Oct 2011
